Low and Slow, Day One — Prep the smoker and eat BBQ for lunch

For our first day of “Low and Slow” we started off by watching a couple of videos about the art of smoking meat.  The video also taught us a couple of different ways to cut meat with a knife. Then we transferred all of our supplies to Van Meter Hall.  We then got introduced to Mr. Sussman’s smoker; he showed us all the different parts and how it works. After he instructed us about the smoker we started prepping the smoker for Monday by spraying on some oven cleaner.  We tossed around the football in our free time. 

When it was time we headed out to lunch. We hopped on the bus for a 35 minute ride to 322 BBQ in Mullica Hill.  When we arrived, we were all starving and excited to eat.  Almost everyone got brisket, mac and cheese, and fries. We were all stuffed after eating and had an interesting discussion about how we’d rate the restaurant. We headed home and did some last-minute work before ending the day. We had to scrub the grates of the smoker as well as the edges where we would be gluing a heat-resistant gasket to get rid of air leaks. Overall a fun and great first day of Intensive Learning.

Mr. Sussman will be shopping over the weekend, and on Monday we’ll be prepping six racks of ribs and test-firing the smoker.
