Cooking from Scratch

Today, the Food, Cooking, Culture, and Customs Intensive Learning started off the day with a game of jeopardy about food and cooking around the world. Then, the group went to Rowan College of Burlington County (RCBC). We met Chef James and Chef Sherry, who demonstrated to us how to cook a meal that included ravioli, lemon curd, and Basque chicken. The meal was inspired by cuisine from the French regions Provence and Pays-Basque. In groups of three, we cooked this meal from scratch. We learned many new skills, including butchering a chicken and rolling dough into a thin ravioli shell. After cooking in the RCBC kitchen during the morning, we enjoyed a delicious meal. All our hard work was worth it.
